Curlee Girlee’s Delicious Blueberry Pie Recipe

Summer is all about the outdoors, swimming, boating, climbing trees, lounging outside.  Picking berries remains one of my all-time favorite activities.  In June we pick strawberries, in July we pick blueberries and in August we find raspberries and blackberries.  What do you do with those boxes of fresh blueberries that each child picked?  Well, of course, you make blueberry pie!  I like to make mine a bit healthy so I replace my white flour with half whole wheat and half spelt and I cut my sugar in half by replacing it with Monk Fruit Sweetener, but you can do this however you like!  Just make sure you keep your ingredients fresh and it will be almost impossible to ruin this delicious recipe!

For the Pie Crust:

  • 1.5 cups all-purpose flour, and 1 cup whole wheat/spelt/almond flour plus a drop extra for rolling out the dough as it tends to get sticky
  • 1 cup unsalted butter,  (or if you prefer you can replace this with canola oil)
  • 1 pinch of salt
  • 1 teaspoon sugar/ monk fruit sweetener
  • 8 tablespoons VERY cold water


Roll out the dough and place it in a pie dish

For the blueberries wash them well- squeeze on lemon juice and mix in 1 tablespoon of sugar/monk fruit sweetener/maple syrup with a dash of arrowroot which will make the blueberries not sticky and stop them from being too runny!

Enjoy this favorite Summer Treat, which can be made into an activity with your curly/non-curly kids!
